1. Peel all vegetables

Although this is a common reflex, peeling all your vegetables in a broth is a waste of time and nutrients.

Naturally, everything depends on the vegetable in question. Of course, you have to peel the onion or zucchini. However, it is better to do it systematically, because the skin has many vitamins.

For this we use a vegetable brush. It is not that expensive and is used on many vegetables, including potatoes, beets, carrots and parsnips.

All you have to do is wipe it down before putting it in a saucepan or saucepan.

2. Cook all vegetables the same way

In most soup recipes, vegetables are sautéed in fat before adding liquid. However, we recommend different methods depending on the vegetables you use.

One option is to sauté the vegetables with shallots and a little butter or vegetable oil for added flavour. However, some vegetables can be steamed. Just cook the broth separately and then mix everything.

3. Cook all the vegetables at the same time

The hierarchy of soups is essential to optimize the flavor and nutrition of each vegetable.

We go from the hardest vegetables to the most tender. So we start with potatoes, zucchini and beets.

4. Add spices at the wrong time

However, if the spice is in powder form, experts recommend adding it at the same time as the cooking liquid.

5. Prepare soup the day before

6. Add too much liquid

There are no rules on the amount of vegetables that can be used in the soup, but special attention should be paid to the amount of liquid used.

7. Cook the soup too long

In the collective unconscious, soup seems to take a long time to make. However, relatively short cooking times are recommended to preserve the nutritional properties of all vegetables.

8. Add dairy product at the wrong time

The hierarchy of soup preparation does not exclude the use of dairy products. Usually, the cream or milk is added at the end of the simmer after mixing the soup. It’s a way to keep the flavor, thickening effect and perfect consistency. It warms the heart and stomach all winter long.
